I haven’t been baking for a while, but last week I finally tried a new recipe! Key lime pie – so delicious!
It has a crumbly biscuit crust, a smooth lime filling and is topped of with citrus whipped cream. The best part? This recipe is extremely simple and quick and believe me: everyone will love this key lime pie!
For the base
- 200g butter biscuits
- 130g melted butter
For the filling
- Zest of 1 lime
- Juice from 4 limes
- 400g condensed milk (Milchmädchen)
- 3 egg yolks
For the topping
- Zest from 1 lime
- 250ml cold cream
- 1x cream stiffener (optional)
- 1x vanilla powder
- Juice from 1 lime
Mix the butter biscuits in a food processor until they are a sand like consistency. Add the melted butter and mix again until everything is well blended. At mixture into a greased springform and place into the fridge for 30 minutes.
Preheat the oven to 180°C (fan assisted).
Rinse limes under hot water and grate the peel of 1 lime finely. Add lime zest, lime juice, condensed milk and egg yolks into a bowl and mix until smooth. Spread the mixture on top of the cool base and bake for 15 minutes.
Once the base and filling has completely cooled off, start preparing the topping.
Rinse the lime under hot water and grate the peel of 1 lime finely. Add cold cream, cream stiffener, vanilla powder and lime juice to a bowl and whip until the cream is stiff and fluffy. Spread the whipped cream on top of the filling.
Top off with lime zest. Serve. And Enjoy!
