I am not the biggest breakfast person. Brunch with the girls? Always! Comfy breakfast in bed? Yes, please! But on a regular weekday I just don’t have the time… or well don’t like to make the time. So it’s usually no breakfast at all or a bowl of cereal.
That is until I discovered no-flour banana pancakes: 3 ingredients, 5 minutes preparation time, seriously delicious!
- 1 banana
- 2 eggs
- 1 tsp cinnamon
Preparing the banana pancakes
- Using a fork smush the banana in a bowl.
- Add eggs and cinnamon and mix thoroughly.
- Heat a little bit of oil – preferably coconut oil – in a pan.
- Using a tablespoon, transfer little portions of the banana-mix into the pan and briefly fry on both sides.
Et voilá! Enjoy your no-flour pancakes with some fresh blueberries, honey or chocolate chips!
